An oak-fired steakhouse and saloon bar on Georgetown's historic square since 1997.

Wildfire occupies two buildings on Georgetown's historic square that date to around 1910, built on the site where the City Hotel stood in the 1890s. Over the next century the buildings held a Piggly Wiggly grocery, Peasley's Meat Market, Lawhon Anderson Air Conditioning and Electrical, a Sears and Roebuck catalog store, and a ladies' apparel and gift shop before owner Bill Cox opened Wildfire Restaurant here in 1997, restoring the original pressed tin ceiling along the way. The restaurant has since been written up in Time Magazine, Southern Living, Zagat, Texas Monthly, the Austin American-Statesman, and the Austin Chronicle, and has been voted Best of Georgetown 14 years running across categories including Best Overall Restaurant, Best Steak, and Best Fine Dining.

The kitchen centers on oak-fired grilling: USDA prime beef dry aged 28 days, a 24oz porterhouse and a 20oz bone-in cowboy ribeye, and wild game like bison strip loin, elk tenderloin, and a sesame-crusted ostrich filet, alongside seafood such as blue corn-crusted catfish and macadamia-encrusted jumbo shrimp. Every Monday after 5pm the kitchen runs a hickory-smoked prime rib special. The restaurant also serves lunch daily and a Sunday brunch built around dishes like eggs Benedict, migas, and chorizo chilaquiles, plus a dessert menu with a Texas pecan pie and a flourless chocolate torte.

The saloon bar runs happy hour Monday through Friday from 3 to 6pm, with $1 off bar food, wine, beer, spirits, and cocktails. Wildfire also handles banquets and private events on request. Reservations are recommended, and walk-in waits can run up to an hour on busy nights. The restaurant is rated 4.5 across more than 2,400 guest reviews on its own site.
