DescriptionHead chef and owner Antonio Giner, professionally trained in Argentina, built Palermo Pasta House around the idea that great Italian food starts with the basics. The kitchen makes seven fresh pasta shapes daily from scratch, and pairs them with 28 different sauces ranging from classic red and cream to mixed preparations. Each sauce starts with hand-crushed, hand-strained tomatoes that become the foundation known as passata di pomodoro. Beyond pasta, the wood-fired pizzas and calzones showcase dough cold-fermented for three days with no chemical leavening. The dining room sits inside the historic Carrington Building in downtown Round Rock, with tables, booths, patio, and bar seating all available. A full wine selection complements the menu, and vegetarian and vegan dishes are plentiful. Reservations are recommended, especially Friday and Saturday, though walk-ins are welcome after 5PM on those evenings.
